When you need a hot chocolate snack but its already getting late heres the fix. I adapted the recipe from one that was from a ‘small batch’ book, It made 2 ramekin (rather large)cakes, so halving it made a great snack, but a big one so its now approximately a third the size so you don’t have to feel too bad about making one (every night? lol)
Mix 4 tsp flour, 2 tsp cocoa, 2+a pinch sugar, a pinch salt and a pinch baking soda in a ramekin. Add 5 tsp milk and 2 tsp vegetable oil.(To keep it easy everything is in teaspoons, of course 3 teaspoons equals 1 tablespoon, but why dirty more dishes?)
Mix well and pop in the microwave for 20 seconds for a very gooey lava cake (a little more for a drier cake = still only about 25 sec) there are no eggs, so don’t worry about uncooked ‘lava’, I think the batter would be great over ice cream uncooked (or slightly heated) too!
Mmm chocolatey goodness, since I use a dark chocolate cocoa powder it can be a little bitter still, that is easily fixed by either topping it with a scoop of ice cream or, my choice a dollop of canned (!!!) chocolate frosting. It all melts together nicely and adds a more milk-chocolate sweetness. Of course die hard chocolate fans would probably like it as is, but how can adding more chocolate be wrong?
